Sweet and Spicy Shrimp Noodle Soup

You will have to excuse the photo, it is not my best work! I forgot about the whole take a picture thing until I was already half way through my bowl. The soup however is delicious. I cannot write a recipe based on it because frankly, I never use one, nor do I measure! Here is a guess at what I used.

2 cups chicken broth
1/4 package brown rice oriental noodles
10-12 shrimp
1 tbs Braggs Liquid Aminos
1/4 cup chopped veggies leftover from tacos (red and yellow pepper, onion, tomatoes, cucumber, and jicama)
a splash of coconut milk
1 clove garlic
a few slices of fresh ginger
fresh ground black pepper
red pepper flakes (my favorite)
a dash of Stevia for sweetness
2 green onions chopped

Simmer all together for about 15 minutes and enjoy. I personally love the hot spices. I know this is not for everyone. It could be toned down a ton, but this is what I love. This makes 1 serving, as do most of my recipes. Unfortunately this diet is for one in our house!
