Muffin Recipe


Hooray for desserts that I can actually consume! I scoured the internet looking for something to bake for a treat tonight. It is pretty frustrating to find baked goods that are sugar free, dairy free, gluten free, corn free, yeast free, and fruit free. Cranberries are one of the few allowed fruits on my diet so I searched for a recipe including them. I found one that I could modify using applesauce and other sweetener alternatives. I have just started using raw honey after much research to find out if it was ok on a candida diet. There are different opinions, but I feel pretty confident that it is ok. I have not had any adverse reactions to it, so it has become part of my diet in small amounts again. The apples are something new, but are also included on a very small list of ok fruits. Apparently they are low on the glycemic index and thus do not have the sugar content that other fruits do. It is important to keep your blood sugar low when battling candida, so apples are ok in small amounts as well.

These are much like a bran muffin. I think it would make a beautiful loaf of gluten free bread. I could absolutely enjoy eating a turkey sandwich on this! Might have to try chicken sandwiched in the middle! They would be great dipped in maple syrup or honey. I would also add a streusel topping if it were allowed! Check the notes in modifying the recipe for additional recommendations. If I could do the sugar, I most certainly would. For now these kinds of treats are rare and I will take what I can get!!

Lemon Walnut Cranberry Muffins
1/2 cup brown rice flour
1/2 cup GF all purpose flour
2 tsp aluminum free baking soda
2 eggs
1/4 cup softened coconut oil
2 tsp stevia powder
2-3 tbs raw organic honey
1/4 cup unsweetened apple sauce
juice from 1/2 lemon
grated lemon peel from 1/2 lemon
1/4 tsp sea salt
1/2 cup almond milk
1 cup frozen or fresh cranberries
1/4 cup crushed walnuts

Mix dry ingredients in bowl. Mix all wet ingredients together. I used my blender to mix the thoroughly. Add wet to dry and mix well. Add in cranberries, almonds, and lemon zest. Mix until well blended. Fill cupcake wells 2/3 full. Bake at 350 degrees for 20 minutes or until brown. Makes 12 muffins.

Modifications: They were good, but not sweet at all. I would add more honey, or add 1/4 cup of sugar. I tried to do away with all sugar, but they need some extra sweetness. Another option would be to add cream cheese frosting. I think they would be delicious, but unfortunately that is not something I will be able to eat.
