Tonight's dinner: Sweet potato fries, Curry Coconut Chicken fingers, and Suspiciously Delicious Cabbage. Check the links for recipes. I modified the cabbage slightly as I can't do dairy. I used almond milk instead.
So the reviews are in. Kids were not a fan of sweet potato fries, and weren't very excited about the coconut chicken. I and my hubby on the other hand liked it. I must learn to multi-task better so that my food gets done at the same times. We had some burnt edges. I would add salt to the chicken recipe. It was slightly bland for me since I can't use any dipping sauces. Loved the sweet potato fries. Hint: Cook them on a wire rack over a pan....they crisp up nicely without needing to be flipped. I would reduce the heat to 425 degrees as well. The cabbage dish was interesting, but very flavorful. It was different, but we both liked it enough that I think I will use it again.
