Most Delicious Mexican Egg Bake

Yummy! I am sure enjoying finding new ways to cook. It takes time, but is well worth the results in the end. I have more energy, feel clearer headed, and my body is thanking me for feeding it good food. I created this egg dish this morning and it was delicious! My only regret is not taking a picture to go with it! I am going to have to remember to do that from now on.

3 eggs whipped (set aside)
1 small red pepper
1 small yellow pepper
1-2 tbs chopped white onion
1 glove minced garlic
1 tbs coconut oil
salt and pepper to taste
2 green onions sliced thin
2 tbs chopped tomato
1-2 tsp taco seasoning
1-2 tbs Fago plain greek yogurt
1 tbs fresh cilantro chopped

Preheat oven to 350 degrees. Saute the peppers, onion, and garlic in coconut oil until tender. Add to a small oven safe dish along with eggs, green onions, tomato, taco seasoning, and salt and pepper. I also added two slices of chopped bacon. (optional) Bake for 15-20 minutes or until egg has been thoroughly baked. Top with cilantro and yogurt. Enjoy! Very yummy indeed!
