Here is today's delicious meal! Grilled chicken, fried jicama, and broccoli cabbage slaw. Very good. I will include a recipe for fried jicama since everyone I know didn't realize you can fry it. I love it because it tastes similar to hashed browns. It satisfies my potato cravings. The awesome thing about jicama is that it is 20% of the calories and carbs of regular potatoes. What is not to love about that?
Fried Jicama
1-2 tbs of butter or coconut oil (which one you use will change the taste)
1/4 white onion chopped
1 garlic glove crushed
1/2-1 cup grated jicama
Heat oil in skillet. Add onion and garlic. Saute until brown. Add jicama and fry like hash browns until the edges are browned. Add salt and pepper to taste. Enjoy!
Let me know how you like this. My husband didn't mind it, but the kids were not fans. I will convert them eventually, but for now I will enjoy it as much as I can. I will tell you that it does have it's own unique flavor and texture.
